Baked Cinnabon French Toast
Who can resist the smell of fresh baked Cinnabon when you walk into a mall? I can remember not wanting to go shopping, but as soon as we walked in that smell would capture my child heart and refuse to let go. I wouldn’t dare ask because I thought Momma would make me choose between Cinnabon or Hot Dog on a Stick. That’s just cruel...no one, NO ONE should ever have to choose between the two! Also, I didn’t have the “Cinnabon money” that was needed so her love of popcorn typically won. But in those moments where she did want to indulge, I would be in complete euphoria as that doughy goodness filled my belly.
When I moved to the Boston, I was pleased to find the Cinnabon shop at the local mall. I wouldn’t buy anything –just linger as I walked past. It reminded me of home...of all the times Momma and I shared the enjoyment of that sweet fragrance. My anxiety was put to rest for just a moment…
Fast forward, I did not deny myself the enjoyment of that gooey goodness! I decided to buy a box of 9 to share with friends after a ladies night in. We were all very excited about this move, but we quickly realized we weren’t children anymore—we all had just one. They were the smaller ones too :)
This left me with 5 buns that intimidated the hell out of me...I was not trying to eat them, especially since I’ve gotten back to working out. So I decided I would do something new with them. Be it that I was having a friend over for breakfast a couple of days later, I decided to GO ROGUE and try out this recipe I had seen a few times on Facebook. This recipe called for unbaked rolls, but I figured letting the buns sit overnight would do the trick! Check out what I did below :)
Money Matters
This was a little more expensive to make, since I bought a lot of Cinnabons! The total cost was $26 for 6 servings. You might be able to save if you buy fewer buns...or if you already have the other ingredients on hand.

- Since this is an original recipe, below are my steps to make baked french toast...but with Cinnabons. :)
- I would look into adding more of the cinnamon mixture—that may take this whole thing up a few levels!
- I let the ingredients sit overnight, but it only takes a couple of hours to make sure the buns soak up the liquid mixture.
My Recipe
Ingredients
5-6 mini Cinnabons
2 large eggs
1½ cups of milk
1 tbsp vanilla extract
1 tbsp cinnamon
Extra icing for garnish
Direction
Cut the buns into fours and lay them in a single layer in a baking dish.
Mix the other ingredients together well, and pour over the buns in the pan.
Place the dish in the refrigerator and allow to chill for at least 2 hours or overnight.
Take the pan out of the refrigerator, and allow to warm to room temperature. In the meantime preheat the oven to 350 degrees. Bake uncovered for 30 minutes.
Remove the french toast from the oven and spread the icing on top. Let the icing set for a couple of minutes and serve hot—enjoy!
I added some spiced mango and bacon for, you know...I more balanced breakfast! haha
