Snackin': Spiced Baked Potato Chips
I am a huge fan of chips! I think I have mentioned my love of snacks, and chips are at the top of my list...esp. with a really good juice. This love is one of many things my dad and I share. He passed along his love of everything processed: cold cereals, ALL the chips, “fruit” juices, canned soups, cold medicines (don’t ask), etc. As Momma was teaching me how to survive, Dad was teaching me how to fully enjoy the survival. I am a daddy’s girl, and could go on and on about my love of this man, but I will stick to the chips.
Dad and I were deeply offended when chips went through their healthy phase in the early 2000’s: baked. I was outraged when my high school replaced the deliciously flavored fried version for the the bland baked ones. Dad understood, and even suggested I try and do something about it. I did. I stopped eating chips. Clearly this wasn’t what he had in mind, but he supported me. Well flash forward a few years, now there are countless sub/sandwich/panini shops everywhere, and all they sell are chips as the side. I got back into chips heavy! My love for them has returned and will not be stopping anytime soon. My favorite is Dirty Chips: It’s a well seasoned kettle chip that just makes my whole little life. As much as I love this chip, I know I shouldn’t indulge too much. So I had to find a healthier option-- and isn't this great for those of us who will make it back to the "healthy life" in a few days? Below you will find my take on baked kettle chips. I mixed Deep South Dish and Serious Eats recipes to create the recipe below.
Money Matters
Honestly folks: it’s a bag of potatoes. I spent $3 on a 5lb. bag. I had the other ingredients on hand. If you follow this blog, then you should have everything on hand except maybe the vinegar, which is about $1.50 if you get the store brand. So you are looking at $4.50 to make all the chips your little heart desires!

I brought two recipes together to make the crispiest of baked kettle chips. The vinegar really brought the crunch I needed.
I wanted a spicy chip, but you can use whatever seasonings you want...GO ROGUE
I seasoned my chips after I baked them (like when frying), but doing it prior to the baking would probably seal in the flavors better.
My Recipe
Ingredients
4 medium rustic potatoes
½ cup of white vinegar
5-6 cups of water
⅓ cup olive oil
Cumin
Sea salt
Chili powder
Directions
Preheat the oven to 400 degrees. Thinly slice the all of the potatoes.
Bring water and vinegar to a rolling boil, then add the potatoes to the water. Let them boil for 2-3 minutes, then drain the water out. Add the remaining ingredients to a large bowl, then the potatoes and toss to coat.
Spray the cookie sheets with cooking oil, and lay the chips down in a single layer (the slices are allowed to touch since they will shrink during the cooking process). Place potatoes in the oven and allow to cook on each side for at least 10-12 minutes, or until the desired color is reached. Move the chips from sheets and enjoy!
