Turkey Nachos
Once upon a time, I was not a fan of nachos. Yes...it is a shame I have had to work through. Nachos can be such a crapshoot! Sometimes they may have real shredded cheese, other times it could be cheese sauce. Maybe the ground meat has beans in it, maybe it doesn’t. Once I was served canned chili and cheese on tortilla chips and it was called “nachos”...it was good, but it wasn’t what I expected. I think that’s the blessing and the curse of this deliciousness: we all have our ideas of what nachos could be, but that doesn’t mean it’s what you’re going to get.
And THAT revelation is how I got over my disdain. I would have to get into the kitchen and make my ideas come to life. I know what I like and I have full power over the outcome! Plus, nachos are super easy to make for parties. I made the recipe below for my friend’s bachelorette party, and everyone loved it...I think the idea of fresh made salsa and guacamole really impressed them :) Check out the details (NOPE, you won’t be getting my guacamole recipe—I have to keep somethings), and definitely share with me what you choose to do.
Money Matters
This full pan of nachos cost about $17 for up to 8 people to enjoy. That comes out to $2.13/serving. This price does not include guacamole...and it assumes you have the seasonings for the salsa.

You will notice I did not list the seasonings for the meat—I am leaving that up to you. Have fun with what you would like the flavors to be...you may even want to try a different protein.
I did not use too many veggies, but there is always space for more. I added roasted peppers to this recipe as a last minute game-time decision.
My Recipe
1 bag of tortilla chips
½ lb ground turkey
½ small onion, roughly chopped
3 cloves of garlic, minced
Seasonings to taste
1 roasted bell pepper
Bag of shredded cheese (I used cheddar and colby jack)
Sour cream
Salsa
Guacamole
Cilantro
Jalapenos
Directions
Spread parchment paper on a cookie sheet and preheat the oven to 375 degrees.
Place your first layer of chips on the cookie sheet. Spread some turkey, then cheese on top of that, and finally the peppers. Repeat these layers. End with cheese.
Place the nachos in the oven for 15 minutes or until cheese is melted. Let it cool for 5 minutes.
Add the sour cream, salsa, guacamole, jalapenos, and cilantro—enjoy!
