Trade Up: Roasted Garlic Whipped Cauliflower
As I have stated before, I was a little late to the cauliflower game. When things get popular out of nowhere, I typically wait before I look to see what all the hype is about. But once I tried it, I too fell in love and started to play around with cauliflower! With that, you are about to get a few new recipes that center around cauliflower. So if you have been wanting a reason to try out the light-skinned brethren to broccoli, here is your chance! Below you will find a quick recipe for Roasted Garlic Whipped Cauliflower. It is something I typically do when I need something creamy and potato like, without all the calories.

This whole recipe comes out to about $8 (some of the items for this will be used for other recipes to follow - more bang for your buck). If you have things like butter and milk/cream on hand, then it will come closer to $5 for 4-5 servings.

The recipe below is one of my own. Thus, there is a lot of space to #goROGUE. If you are looking for a healthier recipe, then trade out the butter for olive oil and leave out the milk...maybe try vegetable or chicken broth or sour cream if you want a creamy feel. You can add cheese and bacon for a loaded feel or some sort of pepper for a kick.
My Recipe
Fresh or frozen cauliflower chopped
Olive oil
Fresh garlic
Butter
Milk
Direction
Preheat the oven to 400 degrees. Toss the cauliflower in the olive oil and season as you please. Cut the top of the garlic bulb off and drizzle olive oil on top. Place the cauliflower and garlic on a cookie sheet and roast in the oven for 20mins, or until the cauliflower starts to brown and is tender.
Mix the cauliflower and peeled garlic in a bowl with the butter. Mash or food process the cauliflower, garlic and butter. Add milk as needed, and season as you like.
Serve as a side or add some toppings to make it the main!
