Lunchtime Special: Blackened Salmon Caesar Salad
I typically do meal prep on the weekends. It gives me time to do other things during the week, but most importantly it gives me a routine. I try to do a couple of variants on the the same breakfast, and the same with lunch. The dinners are a little different-- that’s how I keep this blog going! I do 2-3 different meals. Since it’s just me, I make 4 servings: 2 to eat the week I cook, and 2 more for next week.
This week I tried something a little different with my lunch: Blackened Salmon Caesar Salad. I usually only use chicken, turkey, or tuna for my salads. But a friend of mine made some salmon the other day, and it gave me an idea! Below you will see my attempt to spice up my lunches for the week.

I spent $26 for this salad. It yielded 5 servings, thus $5.20/lunch.

You could use another type of protein, like tuna or tilapia if you need something cheaper.
I used parmesan cheese, but you could go for asiago or another similar cheese.
My Recipe
1lb salmon, cut into 4-6 servings
1 tbsp brown sugar
1 tbsp salt
1 tbsp cayenne pepper
1 tbsp Italian seasoning
1 tsp black pepper
Romaine lettuce
Crutons
Grated parmesan cheese
Caesar salad dressing
Directions
Pour ⅓ cup of oil in a skillet over medium-high heat. Mix the seasonings in a medium bowl. Season the pink side of the salmon (you will have extra so save it for something else).
When the skillet is ready (over medium-high heat), place salmon skin side down in the oil. Cook for 3-5 minutes. Flip salmon over and cook for 3 more minutes, or more until desired doneness.
Place salmon on a plate with paper towels to catch excess oil. As the salmon cools, create your salads using the lettuce, croutons (you may want to leave croutons out to keep the crunch), and cheese in each of the individual containers.
Place the salmon on each of your salads, close containers, and place in the refrigerator. Grab it on your way to work or when you are ready to eat, add the dressing and enjoy!
