Lunchtime Special: Blackeye Pea Turkey Burger
I am always looking for a good burger. I’m not too picky about it either: cheap, flavorful, and preferably home-made—is that too much to ask for?! I think not. But with all the talk about cancer and its links to high meat in-take, I poorly try to curb my love for meat. I try to participate in Meat-less Mondays when I think about it. I even bought cookbooks full of tasty meal ideas so I wouldn’t miss that particular type of protein. But as I make my way back towards “lighter-eating” habits, I found a cookbook a friend of mine sent me. This book is filled with great recipes, it even got me back into eating oatmeal again.
Anywho, Leanne Brown created a veggie and meat burger using lentils and beef. I had neither on hand and was not in the mood for a grocery store trip so my take is below.
Money Matters
As I stated, I used ingredients that I had on hand. But had I needed to buy the ingredients, it would have come close to $15, or $3.75 per burger and side salad. If you aren’t looking to be that healthy, then ditch the salad for a cost of $3.25 a burger.

- This recipe is fairly open to individual interpretation. Thus, I used black-eyed peas and turkey for mine.
- I also used “skinny buns” to keep the calorie count down. I did not want to overload on carbs.
- I used a spring mix salad and cheese as my burger toppings. But you know how I feel about these types of details: do you!
- I grilled the burgers.
My Take
1 ½ cups of cooked black-eyed peas (cook to package directions)
½ cup of bell peppers finely chopped
¼ cup of yellow onion finely chopped
½ ground turkey
1 lightly beaten egg
Salt, chili and garlic powders
½ cup of cheese
4 skinny buns
½ cup of spring mixed greens
Directions
Roughly mash the peas.
Mix the peas, veggies, meat, seasonings and egg together in a large bowl.
Form four patties and add them to the heated grill. Flip the patties once adding cheese to them once you have flipped them. Toast the buns, then assemble the burger with the greens. Enjoy!
