Spinach and Artichoke Dip
March is my birthday month! This March is a little different since it opens 30’s door! I’m typically excited for my birthday, and this year is no different. It puts me closer to the point where I will honestly ask one question, and expect no answer...I get giggly just thinking about it! This brings me to how I celebrate my birthday: living like no one can answer that question ALL DAY! Sometimes I make a big deal about my birthday, other years I don’t. And this year, I don’t know exactly how I will spend the day. 30 is a big deal in today’s society-- hella pressure. But I honestly don’t want to do a big thing. Maybe just a day in semi-solitude...or a dinner with friends...who knows?! I know I’m eating all the foods and may start with my Spinach Artichoke and Bacon Dip. I get to enjoy spinach, bacon, cheese and beer, ignore whatever diet I’m currently pretending to be on and just be happy.
With that, check out my dip and let me know what you think! It’s really good and doesn’t take long to make-- I mean, I can’t be in the kitchen all day on my day so you shouldn’t either :)
Money Matters
In total, I only spent $5 since I had most of the ingredients. If I had not, minus the seasonings and oil, I would have spent $12 in total.

I would love to see a different flavor in the dip like buffalo or sriracha
You could use a little more bacon
My Recipe
¼ cup olive oil
Salt and pepper
8 oz cream cheese
¼ cup sour cream
1 cup mixed white cheese
1 cup mixed cheddar cheese
½ cup mozzarella cheese
1 cup frozen chopped spinach, thawed & wrung dry
1 cup IPA beer
½ tsp garlic powder
8 oz quartered artichoke hearts
Circular bread loaf
Directions
Preheat oven to 350 degrees. Cut the top off the bread, (and the insides of loaf into bite sized squares for dipping if you choose) drizzle with olive oil. Bake five minutes.
Add the cream cheese, sour cream, mixed white and cheddar, spinach, beer, and garlic powder, process until well combined. Add bacon and artichokes. Once combined, microwave for five minutes, stirring after three minutes.
Place cheese mixture into the bread bowl, sprinkle with remaining cheese. Return to the oven and bake uncovered 25-30 minutes or until cheese is melted and center is hot.
Once out of the oven, allow to cool for no more than five minutes. Serve warm, and enjoy!
