DIY Granola
This Christmas I was gifted a vegan cookbook by my editor. Since she knows the mission of this blog, the book was written by a black woman: Why Vegan is the New Black? by Deborrah Cooper. I was so excited because she also knows I want to get my POC cooks of color library in order...I currently have 3 now! But this book was special for me because I like to see POC creating foods that are of their cultures in different ways. I should not have to give up my cultural tastes because they have been deemed “unhealthy.” I should be able to enjoy the flavors that I am used to, while being healthy. Cooper does this. While I plan to make my way through this book this year, I figured I should use one of her recipes during this month as a thank you to her and my editor-- two Black women inspiring me!
Below you will find my take on Cooper’s granola. She gives a basic recipe, which leaves space for you to make it what you want...something that will get you to follow through with eating. I hope you enjoy and support her by getting your own copy. Let me know what you think-- of my recipe and hers!
Money Matters
I spent $8 for this recipe, because I had to buy the more expensive items on the ingredients list: the oats and agave. Everything else I had on hand, so it may be a little closer to $15 for everything. Regardless, with a yield of 3 servings, I spent a little more than $2/serving.

I know granola isn’t the most fun snack, but you have some space to make it such--add some sweet or savory or salty.
I added chocolate and cranberry to mine, because they’re my fav flavors in the winter
Granola is fairly versatile since you can eat it as cereal, in yogurt, by itself, etc.: make it what you want it to be!
My Take
2 cup quick-cook oats
¼ cup almonds, chopped
⅛ cup dark molasses
⅛ cup agave nectar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Olive oil
¼ cup chocolate chips
¼ cup dried cranberries
Directions
Preheat oven to 300 degrees. Coat one baking pan (or cookie sheet) with olive oil.
Mix the first 6 ingredients together in a large bowl. Spread the mixture about ½ inch thick on the pan. Bake for 20 minutes, and shake half way through to allow oats to brown evenly.
I added dried cranberries and dark chocolate chips to add a little more flavor.
Once done, allow to cool and enjoy!
