(Veggie Heavy) Pasta Salad
One of my favorite sides to make is pasta salad. It is super quick and a great base for further creativity! I learned how to make it at a fairly young age. Someone would make the pasta and leave the rest for me. As I got older, it became mine to make exclusively and I loved it. This might have been the first thing I cooked to be honest...with assistance (pancakes were the first without assistance, just in case you were wondering).
During the summer, Momma had a semi-strict no oven (and sometimes stove) policy. We would turn to lots of salads and fruit. This particular recipe was a go-to, especially if we had grilled meat to pair it with. I haven’t deviated much from the original basic recipe. But if i make it into a meal, then I go wild. Money Matter
The whole recipe costs about $11 to make six servings as a side, or two to three servings as a main. That comes to about $1.34/side serving or $3.67/main serving.

Here are some ideas for you:
Add protein; my fav is grilled chicken or fish/shrimp
Play around with cheeses; I used feta, but parmesan or asiago cheese works as well
Look into different types of dressing or make your own
I use spiral pasta, but use whichever kind you like
Add more veggies, like leafy greens
My Recipe
4 cups cooked pasta, made to the directions
1 cup Grape tomatoes, halved
½ cup Feta cheese½ cup olives, sliced
½ cup Italian dressing
Salt
Peper
Directions
When pasta has finished cooking, drain and rise in cold water.
Toss all ingredients in a large bowl. Add salt and pepper to taste. Allow to chill in the refrigerator for at least one hour. Serve and enjoy!
