Veggie and Egg Fried Quinoa
...and again, I have swapped out rice for quinoa. This time I made a Veggie and Egg Fried Quinoa. This is honestly one of my favorite things to make because I love fried rice. There have been times when I have ordered fried rice...but added in some appetizers just to skip the judgment. Once I learned how to make it, my world was changed! I typically try not to learn how to make my favorite things because I do not practice self-control and end up making (and eating) it all the time. It’s bad. But I have been able to switch it up and use quinoa here and there to not get tired. Also, this dish is very versatile so you can add other proteins and veggies-- thus, there are so many possibilities of flavors!
Welp, below you will find my quick take on Veggie and Egg Fried Quinoa. You may see this again in a vastly different way on this blog...who knows?! Also, do not expect too many photos for this post-- it happened so fast, I kinda forgot to take more pictures.
Money Matters
You will spend about $10 if you don’t have sesame seed oil or quinoa on hand. That is $2.50/ serving, but much like the last recipe: you could get 5-6 servings from this if you add more to make it a meal. I had grilled teriyaki salmon and sauteed bok choy.

There is so much you could do with this recipe:
You can use other veggies, or none at all
You can add things like kimchi to spice it up
Also, meat is always an option :)
My Recipe
4 green onions, roughly chopped to the green part (save the green for garnish)
3 cloves of garlic, roughly chopped
½ cup frozen veggie medley
1 large egg
1 tbsp ginger power
½ cup sesame seed oil
⅓ cup soy sauce
Pre-cooked quinoa (make a day ahead or earlier and pop it in the freezer to cool it down-- but not to freeze)
Directions
Beat the egg, and mix ¼ cup sesame seed oil, half of the soy sauce, and the ginger powder. Set it to the side. Heat ¼ cup of the sesame oil in a skillet on medium high heat. Once the oil easily spreads add the onion and garlic, stirring for 3 minutes. Then add the frozen veggies and allow to cook for 5 minutes.
Now add the egg mixture to the onion and garlic and cook until the eggs are scrambled. Once eggs are done, add the rest of the oil and soy sauce, and the quinoa. Fold in all the ingredients until the quinoa is fully mixed.

Serve alone or as a side dish, and enjoy!
