Egg Bake
Breakfast is one of the hardest meals for me to cook because I do not appreciate it as much as I should. I get it that it is the most important meal of the day, but if I don’t workout in the morning I kinda forget about it, especially if it’s a “get up and go QUICK” kind of day! Also, all of the good breakfast dishes take time to make or are carb-loaded. If you’re trying to stay healthy or not be hit with the itis by 10am, the options feel more limited when it comes to taste. But I think I have found a dish that is fairly healthy and not too heavy - my Egg, Sausage and Cheese Bake. It is easy to make, and the recipe yields enough servings for a working week!
Money Matters
This dish costs me $14 to make-- that is about $2.80/serving. If you add a banana to the meal like I usually do then you are at $3 for breakfast!

I typically change up the veggies used or will use bacon instead of sausage...have fun with it
Cut some of the calories and use egg whites
I like to use foil, but you could also oil the pan to prevent it from sticking
The seasonings change up the taste as well, so have at it!
My Recipe
½ package uncased sausage
6 eggs, beaten
1 cup coconut milk
½ bag of slaw mix
1 tbsp Old Bay Spice
1 tbsp garlic powder
1 tbsp onion powder
⅔ cup shredded cheddar cheese
Directions
Preheat oven to 400 degrees. Cover circular pan with foil. Spread the sausage thin out to cover the bottom of the pan. Mix the seasonings with the beaten eggs. Add milk and stir until mixed well.
Scatter the slaw around the edges of the pan, on top of the sausage. Pour eggs-milk mixture on top of everything, and make sure it is as even as possible. Sprinkle cheese on top, and place in the oven (be sure to put a larger pan under the dish in the oven, in case of spills). Bake for 30-40 minutes or until the middle is cooked through (poke the middle with a fork, if it is clean, it is done).
Allow to cool. Slice into 5-6 servings, and enjoy!
