Lime Brown Sugar Dover Fish
...and the saga of “get back to the kitchen” continues!
I decided to follow the rabbit hole that is YouTube last week and was pleasantly surprised! I typically stick to written words when thinking about cooking...or IG. But with a little browsing, I came across a few cooking videos and channels-- notably: Darrius Cooks.
1) We have similar signoffs (Mine: Happy Cooking Y’all; his: Happy Cooking…)
2) He typically speaks at the end of the video to break down the flavors, instead of talking throughout the whole clip; which quickly wins me over!
His recipes are often on the healthier side and are fairly easy to make. With that, please find my take on his Lemon Brown Sugar Salmon.
Money Matters
I spent about $10 to make 4 servings-- $2.50/serving. I added some brussel sprouts on the side to complete the meal, for an extra $3.

Let’s be real, his recipe was more of an inspiration to make fish than it was as a basis for my outcome. But I always give credit where it is due, so:
I used lime instead of lemon and I added mustard.
I used crushed red pepper flakes, instead of black pepper.
I used dover (a white fish) instead of salmon...I’ve done a lot with salmon over the last couple of months; and using a substitute cut down on costs.
My Take
1lb dover filets
½ tsp salt
½ tsp crushed red pepper flakes
1 tbsp brown sugar
½ tsp of mustard of any type
2 cloves garlic minced
1 tbsp olive oil
1 lime thinly sliced
Cilantro
Directions
Preheat the oven to 400 degrees.
In a bowl, combine the salt, red pepper, brown sugar, garlic, mustard, and olive oil until it forms a paste. Then spread over one side of each filet.
Roast in the oven for 12-15 minutes, or until the fish has cooked through. Allow to cool slightly, add lime slices and cilantro as a garnish and enjoy!
