Roasted Parmesan Cauliflower
I am trying to get better about snacking. Moreso, I am trying to broadened my understanding of what constitutes as a snack. I have done a couple of different types in the past, but I am still learning. This led me to give veggies a try- no, not raw veggies and a dip of some sort! I like veggies, but typically one of a few ways: roasted, crispy, and sauteed. The next couple of posts will be me playing around with cauliflower (y’all know I love it). The recipe below is a quick Roasted Parmesan Cauliflower one and it’s so delicious! I had to make myself slow down on eating them up. But the lack of guilt made the self control slow to show up. :) Try it out and let me know what you think...maybe you would do it another way?

To make 4-5 servings came to a total of $3 (I had onions and garlic on hand). That is about .75/ serving-- that is a snack sized price!

This recipe is simple, so you can go full ROGUE on it! A few ideas:
Swap out the cauliflower for broccoli or maybe add some other veggies to it
Try thinking of particular flavors you would want and season accordingly
This recipe can easily be a side dish - just add a little more to the plate.
My Recipe
1 head of cauliflower, cut 2-3 inch florets
1 small onion, rough julian cut
3 garlic cloves, thinly sliced
2 tbsp olive oil
1 tbsp salt
1 tbsp crushed red pepper
1 tbsp Italian seasoning
¼ cup grated parmesan cheese
Directions
Preheat the oven to 425 degrees.
In a roasting pan, lined with parchment paper, toss all the ingredients (except for the cheese) together making sure the cauliflower is well coated with oil and seasonings. Put pan in the oven for 35 minutes, tossing every 10-15 minutes. Next add the cheese, and allow to cook for another 10 minutes.
Allow the cauliflower to cool for for a few minutes, and enjoy!
