Buffalo Cauliflower Bites
I think I have spoken about this before, but I am not a fan of fads. I just don’t understand how things can become so popular so quickly, especially when trying to rebrand something as “fun” when talking about a healthy snack. Take buffalo cauliflower bites, for example. They are not that great of a replacement for buffalo wings, even when fried. Thus is took me a while to work myself up to try it...I wasn’t about to get my hopes up-- I LOVE buffalo wings! Cauliflower is not, nor will it ever be chicken and I refuse to pretend otherwise.
Though I initially refused to try it, I have tried it...a few times. I had to be proven right and I was. I will say, they are really good-- but they are not a substitute for chicken. I like the bites fried or baked crispy and have done my own rendition below inspired by this recipe. Check it out, and let me know what you think!
Money Matters
I paid about $3 for this recipe since I had everything on hand. Add another $3 for your tomato based sauce and flour, if you do not have either on hand. The recipe yields 4-5 serving, costing about $0.75-1.50/ serving.

Use different flours or other coatings
Make your own buffalo sauce

My Take
Recipe
⅔ cup flour
2 tbsp sofrito
2 tbsp garlic powder
2 tbsp onion powder
2 tbsp smoked paprika
1 head of cauliflower, cut 2-3 inch florets
⅓ cup Frank’s Buffalo sauce, or more for your personal taste
Directions
Preheat oven to 450 degrees. Line a roasting pan with parchment paper.
Mix the first five ingredients in a large bowl, making sure to stir until smooth. You can also use a food processor or blender.
Add in the cauliflower, making sure to fully coat the veggies. Pour it into the pan, ensuring each piece is separate. Bake for 40 minutes or until crispy. Allow to cool, serve with your favorite sauce, and enjoy!
