Kale Pesto
I promised sauce and sauces you shall have! I have been extremely lazy about cooking, and as of late. So I have been throwing things together (i.e., salads, one pot meals, etc.) for dinner as an afterthought. So I figured I could do better and make sure I have various items on hand so that dinner would be homemade, quick, and tasty (ensuring that I don’t order in).
I decided to make a few different salad dressings, and a sauce-- pesto to be exact. I decided to make this one because I am still trying to make myself enjoy kale. I have done traditional pestos and used spinach in it...figured it was time to go ROGUE and push my discomfort with kale (Aside: Please do not ask me why I don’t like kale-- I am not really sure. Maybe the look? Maybe because it’s so polarizing? Idk). Lucky for me, the recipe came out pretty good. In the photos you will see zoodles and baked chicken! Money Matters
I spent about $5 since I had most of the items on hand, except kale and basil. It will be closer to $15 if you are buying everything. I am unsure how many servings you will get from this as it’s up to you on how much you use each time. But you should get 2 cups from this recipe, and use a little more than half for a recipie asking for pesto.

I went full ROGUE on this one and enjoyed doing it! A few things you can try:
Add some parmesan or another cheese of that consistency
Use spinach instead or kale, or neither-- do you
You could try cooking the kale before using it...it may come out a differently
My Take
⅓ cup almonds
3 cloves garlic
3 cups steam-less chopped kale
½ basil leaves
1 lemon zested, save the juice
⅓ cup extra-virgin olive oil
Salt
Pepper
Directions
Pulse almonds in a food processor until finely ground. Add in garlic, and pulse until chopped. Add the kale and basil; pulse until finely chopped.
Add in the lemon juice and zest, then slowly pour in the olive oil-- pulsing to incorporate. Transfer the pesto to a bowl and season to desired taste. You'll have about 2 cups of pesto; use about 1/2 cup for a dish with 4 servings. Enjoy!
