Lunchtime Special: Spiced Watermelon Salad
I know it has gotten cooler out, but I’m not over summer eating yet. Growing up, I knew nothing about seasonal eating. It wasn’t until moving to the east coast I learned watermelon was best during the summer! It took a few times of buying lackluster melons for me to consider following this “seasonal” thing might be real. Fast forward though, I have finally come around to this conclusion-- sometimes I just want some watermelon in the fall, and will not to be judged for this! With that, please find my quick recipe for Spiced Watermelon Salad below. It really is more of summer salad, but eat it when you want :)
Money Matters
I spent $15 to make this salad. I am sure it would have been cheaper if I made it during the summer or on the west coast. As a side it would yield 8 servings, but I enjoyed it as a main-- thus, 4 servings coming to $3.75/serving.

A few things I would add or change:
This salad does not need the feta
Adding some mint would be an even more refreshing
I suggest not compiling the salad until you are ready to eat it...not a good candidate for meal prep
My Recipe
½ medium watermelon, cubed
2 avocados, diced
¼ cup cherry tomatoes, cut in quarters
Juice of 2 limes
¼ cup olive oil
1 tbsp chili powder
Directions
Whisk together juice, oil, and chili powder then set to the side.
Add the remaining ingredients to a large bowl, pour the dressing on the salad. Toss together until well-coated. Allow to chill at least 30 minutes, but no more than an hour. Serve and enjoy!
