Roasted Tomato Sauce
I have been slacking hard on my kitchen time because warm weather keeps me busy. But now that it is colder, I have a bit more time on my hands. I get to think about the all the amazing cold weather and stick to your bones food! As I made my way back to the kitchen, I texted Momma to see if she had any ideas. I knew I wanted a lasagna or something, so I asked her about a tomato sauce-- she did not disappoint! Below find my take on Momma’s Roasted Tomato Sauce.
Money Matters
It cost $6 to make 6-7 cups of sauce. I had some of the ingredients on hand, and I forewent meat so the price it is a little cheaper.

This sauce was a full #ROGUE move. I had pieces of leftover onion and bell pepper from other recipes, so:
Using different onions is a great move, but if you want a sweeter taste use yellow; or a spicier taste, use red.
If you don’t want an overpowering taste of bell pepper, use red and or yellow-- not green.
The more garlic, the better!
My Recipe
8 roma tomatoes, cut in halves
¼ red bell pepper
¼ green bell pepper
⅓ small yellow onion
¼ medium red onion
¼ medium white onion
¼ cup olive oil
Salt, pepper and Italian seasoning for taste
Directions
Preheat oven to 400 degrees. Coat the veggies with oil, and season with salt, pepper, and Italian seasoning.
Allow to cool after cooking, about 10 minutes. Put all the ingredients into a blender or food processor and puree. You may need more seasoning once blended, but you should hold off. Allowing the sauce to sit for a few hours, or overnight, allows all the flavors to set.
