Grilled Chicken Salad
I’m going to keep with pushing Spring forward in the kitchen. Below you will find my simple recipe for a Grilled Chicken Salad. It’s a dish you can make ahead of time with meal prep or the day of! You can also play around with the flavors by adding to the base I give you below. So please, have fun with it-- and let me know what you think!
Money Matters
I spent $15 to make 5-6 salads for the week. That is just under $3 for each salad. True, it takes a little more effort, but these prices beat pre-made salads that can easily range from $6-$12.

I went for a light salad with part of an avocado and cheese, but you there area lot of options, it just depends on what your taste buds are looking for:
- Add some fruit, maybe a citrus or berries
- Add something crispy, maybe bacon or crispy tortilla pieces
- Try a different marinade for the chicken to give it some kick
My Recipe
2 tablespoon extra virgin olive oil
2 tablespoon balsamic vinegar
2 teaspoon of the following:
Salt
Chili powder
Dry mustard
Onion powder
Cumin
½ pound of skinless boneless chicken
2 cup fresh spinach
¼ cup dry slaw mix
¼ cup shredded carrots
¼ cup cherry tomatoes
Directions
Heat the grill to medium-high. Meanwhile, combined the first seven ingredients to make the marinade. Add chicken to the mixture and allow to marinade for at least ten minutes.
Cook the chicken on the grill until fully cooked, about 10-15 minutes. Cook longer if needed. Once chicken is removed from the grilled, allow to rest for five minutes then cut into strips.
Combine the remaining ingredients and the chicken in a bowl. Add other toppings and dressing, if desired, and enjoy!
