Beef Ramen w/ Zoodles
Surprisingly, I am somewhat of a picky eater. I have gotten better over the years, but my family had to put up with this pickiness for a solid 18 years. I wasn’t the type of child who only ate chicken fingers (that wouldn’t have flown in my house), but it took me a while to warm up to new foods. Nana noticed this and figured out how to work with it - she showed me how each food is made!
A big reason I distrusted new foods was because I couldn’t see what was in it - maybe it was baked or covered in a sauce. After some time in the kitchen with her, I became more comfortable with new foods. Had it not been for that time, I am unsure I would be writing about my love of food and kitchen happenings today. That said, I still get a little weird if I can’t see what’s in a dish. This must be why I love simple soups. I know summer is coming to an end, but I live for hot soups in the warm weather-- I just try to make lighter options! So below is a recipe you have seen before, but with zoodles and beef instead.

In total I paid $10 for the 4 servings-- $2.50/ serving. It’s super cheap, and very easy to make...a good lunch option.

This whole recipe is ROGUE! But if you like to go a bit further:
You can try another protein...it doesn’t have to be meat
Add more veggies!
Try making a broth from scratch or premade broth, or a different broth (beef, veggie, etc.)
My Recipe
4 medium zucchini (noodled)
2 cups of carrots, julienned
¼ cup scallions
2 cups bean sprouts
2 soft boiled eggs
½ lb beef of choice (sliced as thin as possible)
1 small onion, diced
3 cloves of garlic, minced
4 cups chicken broth
½ cup soy sauce
1 inch ginger, minced
Directions
Mix chicken broth, soy sauce, and ginger in a pot and bring to boil.
While waiting for the broth to boil, add onions and garlic in a skillet over medium. Cook for 5 minutes. Add thin beef slices and allow to cook until browned. Remove it from heat, and place to the side.
Add the carrots, bean sprouts and scallions to broth. Cook for about five minutes. Add the zucchini noodles and cook until the noodles are to your desired level of done-ness. Add the beef in the soup, and enjoy!
